Counting kitchen stock in Enugu without losing a whole Sunday
A weekly count of the 40 items that matter most, instead of a monthly count of everything in the store.
A restaurant in Independence Layout used to close early on the last Sunday of the month to count every item in the kitchen store. The count took most of the day and was out of date by Tuesday.
Count less, more often
The kitchen now counts about 40 high-value items every Monday morning: rice, oil, proteins, drinks and gas. Every delivery and every removal is recorded as it happens, so the weekly count is mostly a check.
When the count and the record do not match, the difference is small enough to trace back to a specific day.
